Day 14: Not "Fixed", But I'm Gettin' There

I'm on the downhill swing of my first cold with no meds. Baby L caught a cold last week and not only gave it to his father and grandmother, but also to his favorite person in the whole wide world. Me. (Maybe not his opinion, but until he can speak for himself, I'll call it like I want to.) Since I'm still breastfeeding I haven't taken anything other than a couple Tylenol here and there. So...I haven't felt the greatest the past week...to say the least. By the way? When he's 16 and wants to go to Mardi Gras and I say no, he SO better not give me any crap about it. "Do you know the sacrifices I made for you?!?!?!?!!"

Yesterday I trudged through another day of eating what I already have and blowing my nose in between. Why are you always SO much hungrier when you have a cold? I'm sure there's a scientific reason, but dang...I could eat a horse. Possibly raw.

Frozen waffles for breakfast (found them while searching for some veggies), Ritz crackers and cheese for snack, and more leftovers for lunch. I initially heated up a Kashi TV dinner, but after a few bites I realized that it was quite spicy and since Baby L was already having a not-so-sweet day, I decided to try something else in case this bumped his day from "not-so-sweet" to possible "drop-him-off-at-someone's-house". Luckily there was a tray of leftover brown rice, chicken pieces, and veggies from the other night. Not what I really wanted, but it worked.

Wednesday nights we have small group and this week I was on the list for a side dish. I decided to do a broccoli and cheese casserole since I already had everything (imagine THAT).

Broccoli and Cheese Casserole
1 fresh bunch of broccoli (I used a bag of frozen florets)
1 medium onion (I used two handfuls of diced onions that I had previously chopped and frozen)
1 can cream of mushroom soup
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
1 stick butter (I only used a half...my butt's big enough as it is)
1 cup rice
about a cup of grated cheese
Boil your broccoli and saute your onions in the butter. Get the rice cooking while you're doing all of this. (I must admit that having three things going on the stove is a little stressful but kinda makes you feel all Julia Child-y...pretend you're on a cooking show and do that talk-through-your-nose thing and BAM! You've got it!)
Once everything is cooked, mix it all in a large bowl (but only use half the cheese). Spread it in a casserole dish (I used an 8x11), sprinkle the rest of the cheese on top, and cook it at 325 for about 30 minutes.

I personally love me some broccoli-cheese casserole so it's kinda one of my favs. And pretty easy, too.

Today I'm seriously considering heading to Publix to snag some of the fresh produce deals. I'm really wanting some salad and fruit so I might head over there today and do a little shopping. I'll still try to be good and not grab all the deals. Maybe if I take a picture of my freezer that'll remind me of the good thing I have going?
